A Vegan Thanksgiving

A meat and dairy free Thanksgiving! It was SO good! So filling! All homemade and incredibly delicious.There is never a need to worry that you wont have anything to eat if you go vegan. Seriously.

1.) Green Bean Casserole – I make “cream of mushroom” using soy milk, vegetable broth, flour, diced mushrooms, and a diced shallot. Heat over the stove in a large skillet until desired thickness (use more or less flour). I steam the green beans, toss in a casserole dish with the vegan homemade cream of mushroom and add Fried Onions. Bake for about 30 minutes in the oven. YUM!

2.) Corn Mix – I heat up canned corn, diced onions, diced bell peppers, and diced tomatoes on the stove. Sometimes I add bread crumbs. You can bake it in the oven or just heat it up on the stove.

3.) Tofurky – There are several imitation meats out there. I think they are all really good. For this Thanksgiving meal I cooked a Tofurky Roast. It comes in a box in the freezer section of the grocery store. It can be cooked frozen or thawed. There is a yummy rice stuffing inside!

4.) Carrots, Onions, Stuffing, and Bread Rolls – What is a meal without some additional sides? Any steamed veggie would have been perfect. We chose carrots.

5.) Pickle Wraps – I used two different types of vegan deli meat to wrap around pickles. I have a layer of vegan cream cheese between the meat and pickle. These are so good! I enjoyed the imitation turkey and also the imitation ham. Both worked great!

6.) Baked Potatoes Deviled Egg Style – I cut potatoes in half. Baked them in the oven for half an hour. Then scooped out the middle of each potato. I mixed that up with some vegan mayo, vegan sour cream, mustard, dill, salt and pepper. Then filled the potatoes back up. Delicious cold or warm! I prefer eating them heated up. I put leftovers in the fridge and re baked them the next day! Perfect!

7.) Mashed Potatoes – So easy! So delicious! Simply boil the potatoes till tender. Mash them with some vegan milk and vegan butter. Done!

8.) Vegan Gravy – We used Tofurky. It comes in a tub and I find it in the freezer section of the grocery store.

I think eating Vegan is easier than people think. It feels healthier. I take my time to prepare delicious homemade meals. I care about what I put into my body. I have noticed a big change over the past few years. My digestion is better. My skin is clearer. I feel better by not consuming animal products πŸ™‚

Crock Pot Lasagna

This was my first time making lasagna in a crock pot. It was incredibly delicious! The Follow Your Heart cheese was perfect! The noodles were perfect. Everything was perfect.

I used Beyond Beef (imitation ground beef). Diced onions and bell peppers. Diced mushrooms and tomatoes. Cut spinach (I used a frozen bag). Noodles (I used oven ready/No boil). Pasta Sauce. And Vegan cheese.

I layered the crock pot with all the ingredients, layer after layer. I had to snap the noodles to get them the correct length to fit inside the crock pot. Then I let it cook for a few hours.

Vegan “hot dog”

One way to eat vegan is to buy imitation meat. Plant based ingredients put together to resemble a meal you used to eat. A friend of mine asked, “Why don’t they come up with their own name for the plant based foods they create? Why call it a steak? Or a hot dog? It could have it’s own name.” True. They could call this meat free hot dog something else, but I figure, if I call it a vegan hot dog, you’ll know what I am talking about.

Hot dogs are gross when they’re made with a bunch of leftover mixed up parts from various animals! I read the ingredients on a pack of hot dogs at the grocery store and it said “pork, turkey and beef”. Parts from 3 different types of animal ground together to make one hot dog.

Instead, I eat vegan “hot dogs”. I like the corn dog version that I can buy in the freezer section. But this post is about the fresh plant based doggies we had from the Herbivorous Butcher shop of course!

These were cooked on the grill. But I’ve made them on the stove in a pan before. They turned out fine either way. Just need to warm them up!

I load mine up with ketchup (Full Circle Organic), mustard, diced pickles, and diced onion.

Very tasty!

Meat-Free Ribs

Once again, my delicious meatless meat came from the Herbivorous Butcher shop in Minneapolis. (https://www.facebook.com/theherbivorousbutcher/)

This was the second time I had their “ribs”. The first time I cooked them in a pan on the stove. The second time on the grill. Both ways cooked easily and tasted great. One rib is big enough to share, although I ate mine on my own! One rib was six dollars and some change. Well worth the money. Share it, save some for leftovers, or devour the rib yourself! Can’t go wrong.

I’m big on sides. I like to have a variety when I eat. LOL. So I made mashed potatoes:Β Β Β Β Β Β  Peel and cut up several potatoes, boil them about 10 minutes or until soft, mash them with a fork or masher, mix in vegan butter or a milk alternative and consume! πŸ™‚ YUM

And I steamed carrots and broccoli as well. I LOVE steamed veggies. They smell so good, taste great, and get that bright color! No butter needed! But add some if you like. (vegan)

The ribs have this perfect crunch on the outside. They were the right texture. They’re plant based protein that tastes awesome. Totally recommend trying imitation meat. There are a lot of great options from local places that make meat free meats, places that sell vegan food online (I ordered my vegan turkey online for Thanksgiving last year), even grocery stores and Target carry vegan options in the freezer section. Look around and give it a try. An animal will be so thankful that you did πŸ™‚

There is no right way to kill someone that doesn’t want to die. Animals are incredibly smart. There is no difference between a pet and a farm animal. All animals are deserving of love and respect. I can’t even imagine torturing an animal. But every day, that is what is happening to animals that are raised for food.

“If humans were superior to animals, they’d take better care of the Earth.”

The consumption of meat has gotten out of control. Our population has gotten out of control. We have the power to switch to a plant based lifestyle. We need to save the Earth from being destroyed and feel good about being cruelty free ❀

Vegan “Steak”

A nice plant based “steak” from the Herbivorous Butcher in Minneapolis makes for a great dinner. Easy to grill, cook on the stove or in the oven.

Add some delicious sides to make it a meal big enough to share! Steamed vegetables are always a great option! Broccoli, beans, carrots, cauliflower … And of course I made corn bake, one of my favorites. The possibilities are endless! πŸ™‚

Corn bake: Cream corn, sweet corn, organic bread crumbs or stuffing, onion, diced tomato, bell peppers or chile peppers – mix in a casserole and bake till warm

Eating at home allows you to make the best choice about the food you consume. You can purchase organic, local, or grow your own! You can add any veggie you have at home to any dish and change it up each time.

Feel good about the food you eat. Know where it comes from.

Heavenly Hot Dish

Mmmmm! Oh my goodness! I LOVE hot dish. Easily made in a crock pot or casserole dish. I use Boca Crumbles (imitation ground beef). Chopped celery and onion. I also add rice. This time I used a 7 grain organic rice. I also add frozen veggies. This time I used an organic mixed bag (I used half the bag) of carrots, peas, green beans, and corn. I add a can of cream of mushroom soup and mix everything really well and pop it in the oven!

Delicious!!

A bag of Boca imitation ground meat is about $5.00 in MN/WI. Use half the bag to feed 2-4 people. Use the whole bagΒ  to feed a bigger crowd. Sometimes people think it is expensive to eat healthy or organic. But paying for medical costs later is more expensive. Boca is full of plant based protein and it’s vegan.

Dinner is served

This is for sure one of my favorite meals! Maybe because I love variety. I tend to mix all my sides together and make a heaping pile of deliciousness πŸ™‚

Mashed potatoes are super easy to make. Do people even use box potatoes? I don’t know why they would. I peel and wash the potatoes, cut them in half or into big chunks, and then boil them in water. Once they are soft, I mash them with some almond milk or other milk alternative. Sometimes I add a vegan butter or top them with vegan sour cream. For this meal however, I used the vegan gravy.

The Turk’y (imitation turkey that tastes wayyyyyy better than a real dead bird! Ew!) is super easy to make in the oven. One frozen package comes with 2 and they only take 30 minutes in the oven. They’re filled with stuffing and taste really good! They also come with packets of gravy to thaw in a bowl of warm water. All vegan! Yay!

I made corn bake in a casserole dish. I use canned cream corn, regular sweet corn, and chopped bell peppers, onion, and this time I added a can of diced tomatoes! OMG super good idea. I also add organic bread crumbs or you can use stuffing. Then I bake it in the oven about 30 minutes, or till heated.

Green bean casserole is my favorite! Although cream of mushroom soup is not vegan, so this side is vegetarian. I use fresh green beans (canned will work but not as tasty!). I trim the ends of the beans and then steam them for a short while. Then I mix the beans with cream of mushroom and french’s onions. Bake about 30 minutes and enjoy!

Then I also have some bread rolls as yet another side πŸ™‚

Cooking at home lets me buy the freshest and organic ingredients. And allows me to chose Vegan or Vegetarian options.

Eating at home is a great way to spend time with those you love πŸ™‚ And feel good about what you’re eating!
