What The F**k Do Vegans Eat?

Some people think vegans have a limited diet. But in reality, you can veganize just about anything you want to eat. It takes time to make things at home, but it’s so worth it! Then you can use fresh and organic ingredients. Plus, there are some great frozen vegan options that I recommend buying.

To me, the worst thing to hear is “Ewwww!” and “Gross!” from an omnivore when we discuss vegan food. That’s offensive! I care about my body and my health and I prepare damn good food. To insult someone’s cooking/food before even trying it shows how closed off they are to new ideas, to new tastes, to anything! It’s just FOOD! Like real food.

One thing I have discovered over the past few years is that tons of people are on a plant based path, some further along than others, and for several different reasons.

Most people switch to plant based for their health. That’s why I did it in the beginning. I wanted to be slimmer and have clear skin and better digestion. I’ve met some vegans through meetup.com and they also cut animal products in order to get healthier.Their success stories are wonderful to hear. We know that animal products clog us up. It is better to avoid them for good health, plus they are full of antibiotics and hormones.

Others are cutting back on meat and dairy to help the environment. My dad watched some documentaries on how factory farms produce more toxic emissions than all modes of travel combined. So now he wants to purchase less. I think that’s a great start! I also want to continue a plant based diet for the planet!

And also there is the factor of animals rights and lives. They obviously don’t want to die. They obviously have feelings and emotions. Many animals are very intelligent and social. And all animals deserve respect.

Anyhow! Here are some AWESOME meals that I have made recently. I haven’t blogged in a couple weeks but I have been taking photos! πŸ™‚

Oh, mama! Let’s start with this burger and kabobs! HELLO! I make my own salsa — yum! And I added mustard cause I love mustard!

VeganEgg is a good product to keep on hand. I scrambled up some and cooked the veggies too. Served with Follow Your Heart better than mayo and of course mustard!

When I am lazy, I cook frozen “hot pockets”. The Fresh and Natural store carries several vegan varieties. This here is “pepperoni pizza”. I do recommend them!

Stuffed bell peppers are a classic favorite! Easily veganized by using Boca Crumbles instead of beef.

Mac & Cheese with hot dogs in it. Just like I ate as a kid but now plant based πŸ™‚ And pickles wrapped with imitation deli slices covered in better than cream cheese! Fabulous! And my twice baked potatoes (I used the recipe from peta) – I make a bunch and store them in the fridge and reheat when hungry! Yay!

Simple. Buy in the freezer section. Bake in the oven πŸ™‚

This is my attempt at vegan chicken fettuccine. It turned out amaze-balls. It started by me finding this tub of Heido Ho smoky chia cheeze at Fresh and Natural in the refrigerated section. I bought it and figured I would cover noodles with it! Pretty good idea if I do say so myself. I of course added imitation chicken and some steamed veggies cause that’s how I roll πŸ™‚ DELICIOUS!

This is a pasta I threw together in a crock pot – Noodles, tomatoes, veggies and Boca. I love crock pot meals because I can let it slow cook and it’s ready to go by dinner time and there are usually leftovers to eat for lunch.

Tofurky roast and gravy. Both worth the purchase. They keep in the freezer for a long time so they’re great to have on hand. And I made corn bake. Good food!

Eating vegan can be really simple. Like a sandwich. Which by the way was so good! I HIGHLY recommend Follow Your Heart better than mayo. All of their products are very good.

A Vegan Thanksgiving

A meat and dairy free Thanksgiving! It was SO good! So filling! All homemade and incredibly delicious.There is never a need to worry that you wont have anything to eat if you go vegan. Seriously.

1.) Green Bean Casserole – I make “cream of mushroom” using soy milk, vegetable broth, flour, diced mushrooms, and a diced shallot. Heat over the stove in a large skillet until desired thickness (use more or less flour). I steam the green beans, toss in a casserole dish with the vegan homemade cream of mushroom and add Fried Onions. Bake for about 30 minutes in the oven. YUM!

2.) Corn Mix – I heat up canned corn, diced onions, diced bell peppers, and diced tomatoes on the stove. Sometimes I add bread crumbs. You can bake it in the oven or just heat it up on the stove.

3.) Tofurky – There are several imitation meats out there. I think they are all really good. For this Thanksgiving meal I cooked a Tofurky Roast. It comes in a box in the freezer section of the grocery store. It can be cooked frozen or thawed. There is a yummy rice stuffing inside!

4.) Carrots, Onions, Stuffing, and Bread Rolls – What is a meal without some additional sides? Any steamed veggie would have been perfect. We chose carrots.

5.) Pickle Wraps – I used two different types of vegan deli meat to wrap around pickles. I have a layer of vegan cream cheese between the meat and pickle. These are so good! I enjoyed the imitation turkey and also the imitation ham. Both worked great!

6.) Baked Potatoes Deviled Egg Style – I cut potatoes in half. Baked them in the oven for half an hour. Then scooped out the middle of each potato. I mixed that up with some vegan mayo, vegan sour cream, mustard, dill, salt and pepper. Then filled the potatoes back up. Delicious cold or warm! I prefer eating them heated up. I put leftovers in the fridge and re baked them the next day! Perfect!

7.) Mashed Potatoes – So easy! So delicious! Simply boil the potatoes till tender. Mash them with some vegan milk and vegan butter. Done!

8.) Vegan Gravy – We used Tofurky. It comes in a tub and I find it in the freezer section of the grocery store.

I think eating Vegan is easier than people think. It feels healthier. I take my time to prepare delicious homemade meals. I care about what I put into my body. I have noticed a big change over the past few years. My digestion is better. My skin is clearer. I feel better by not consuming animal products πŸ™‚

Vegetable Soup

I LOVE veggie soup! It’s super easy to make and the house smells amazing!! Plus it gets switched up each time you make it because you can add whatever vegetables you have at the house or garden.

I always buy vegetable broth and/or vegetable stock. Usually organic brands. Then add onions, broccoli, lemon, bell peppers, carrots, tomatoes… whatever you want πŸ˜€

Mmmmm! Cook in a crock pot or on the stove until the veggies are soft to your liking.

Hazelnut Cranberry Roast

I want to talk about how easy and how hard it is to eat vegan and/or vegetarian. I was watching Vegucated and the girl who recently switched to a vegan diet was in tears because this meant she couldn’t eat her dad’s cooking and she felt left out and made fun of. But she struggled with it because she said knowing what she has learned, she can’t go back! And her one wish was that everyone was vegan so it would just be the normal thing!

I totally get it. I was asked today, “Do you eat bacon?” I am the odd one out. Most people have no clue. It can be frustrating. No, I don’t eat bacon! Pigs are incredibly smart and factory farms treat them like crap.

It takes thick skin and persistence to keep at it. It takes passion and willingness to learn more to educate yourself and others about the affects of factory farms.

Anyhow. That’s my mini rant for the day!

Eating vegan is incredibly easy if you have some time to shop around for the right ingredients. Or, in this case, buy a frozen vegan roast! It was soooooooo delicious! Check out the photos:

Perfect flaky crust! Bake till the right temp is reached (follow directions on the box).

Slice it open and enjoy! No animals harmed here. No blood and bones. Just plant protein!

Doesn’t that look yummy? Mmmmmm! This roast was about $20.00 but it serves a lot! And makes good leftovers! I had leftovers twice from it. Would be excellent for holidays!

Add some sides and you’ve got yourself a great meal!

Yes! I made mashed potatoes, again. Probably because they’re easy and delicious! This time I used a ToFurky gravy. It’s in the freezer section of the grocery store. Just heat it in a pot on the stove. Easy! And very good.

I would like to encourage any meat eater out there to try an imitation meat. They are quite tasty! They make imitation chicken, beef, ribs, roast, hot dogs, etc.

Peta says a vegan saves over 100 animals a year by not eating them.

Do it for the animals, your health, and the planet.

Your favorite meals are easy to veganize or make vegetarian. I know because I am doing it.

Sunday Morning Veggies

Vegetables are so versatile. I love them in soup, on a grilled sandwich, raw with dip, steamed, diced, with breakfast, lunch, and dinner. Plus that assortment of color is bound to make anyone smile πŸ˜€

This morning I started a crock pot of vegetarian vegetable broth, chopped onion, lemon, bell pepper, carrots, and celery. I like to add whatever veggies I have on hand.

I also put together a little veggie sampler tray to snack on while I let the soup cook! πŸ™‚

And of course some warm lemon water. I love lemon water warm or cold.

Sloppy (Boca) Joes

When my friend makes vegan sloppy Joes, she calls them sloppy Janes. She adds a dash of paprika to hers. They’re delicious!

Here is a version of vegan sloppy joes that I made for dinner. I add bell peppers, tomatoes,Β  and onions to the mix. Tastes great on bread or bun! Add some veggies for a side, and ta-da!

I buy boca crumbles at a local grocery store, Family Fresh. I’ve seen a variety of imitation ground beef at several stores, just look around in the freezer section πŸ™‚

I love using the crock pot. I can let the imitation ground beef, onions, tomatoes, and peppers cook for hours in there πŸ™‚ Then I can have a few sandwiches throughout the day! It’s a great way to sneak in extra veggies and they thicken up the sloppy joe!

You can always add a slice or shreds of vegan cheese. It’s easy to make a big batch for parties or serving several people! It’s easy to make and always tastes great.

Taco Salad

There is nothing like a delicious plate full of awesome colors! This taco salad is all vegan baby! I use sour supreme instead of sour cream. I always have beans with my tacos (or taco salad). This time, just black beans. But I do love refried beans as well! You can also add Daiya cheese (vegan). Normally I love the baby spring mix for lettuce, this time I used spinach leaves. I usually like to make my own salsa, but it is winter in MN after all.

Meat consumption is harming the environment and killing many many animals. I feel better knowing I am not contributing to unnecessary deaths of animals, we have plenty of other great food options. I would never be able to kill my own meal and I don’t want someone else to do it for me.

Many mexican dishes have beans instead of meat. I love Acapulco whenΒ I go out to eat because I can ask for black and refried beans instead of meat.

We are destroying the Earth so cattle can graze and we can eat them! We cut down rain forests so we can continue to consume meat on a massive level. There is no reason we cannot cut back or quit eating animals all together.

Try the sour supreme! Poor dairy cows are impregnated over and over again to keep them producing milk for humans to consume. We are not baby cows. We don’t need cows milk to drink or to use for cheese and creams.

Tacos are so versatile! Add onions, banana peppers, hot sauce, a variety of beans, etc! yumyumyum
