What The F**k Do Vegans Eat?

Some people think vegans have a limited diet. But in reality, you can veganize just about anything you want to eat. It takes time to make things at home, but it’s so worth it! Then you can use fresh and organic ingredients. Plus, there are some great frozen vegan options that I recommend buying.

To me, the worst thing to hear is “Ewwww!” and “Gross!” from an omnivore when we discuss vegan food. That’s offensive! I care about my body and my health and I prepare damn good food. To insult someone’s cooking/food before even trying it shows how closed off they are to new ideas, to new tastes, to anything! It’s just FOOD! Like real food.

One thing I have discovered over the past few years is that tons of people are on a plant based path, some further along than others, and for several different reasons.

Most people switch to plant based for their health. That’s why I did it in the beginning. I wanted to be slimmer and have clear skin and better digestion. I’ve met some vegans through and they also cut animal products in order to get healthier.Their success stories are wonderful to hear. We know that animal products clog us up. It is better to avoid them for good health, plus they are full of antibiotics and hormones.

Others are cutting back on meat and dairy to help the environment. My dad watched some documentaries on how factory farms produce more toxic emissions than all modes of travel combined. So now he wants to purchase less. I think that’s a great start! I also want to continue a plant based diet for the planet!

And also there is the factor of animals rights and lives. They obviously don’t want to die. They obviously have feelings and emotions. Many animals are very intelligent and social. And all animals deserve respect.

Anyhow! Here are some AWESOME meals that I have made recently. I haven’t blogged in a couple weeks but I have been taking photos! πŸ™‚

Oh, mama! Let’s start with this burger and kabobs! HELLO! I make my own salsa — yum! And I added mustard cause I love mustard!

VeganEgg is a good product to keep on hand. I scrambled up some and cooked the veggies too. Served with Follow Your Heart better than mayo and of course mustard!

When I am lazy, I cook frozen “hot pockets”. The Fresh and Natural store carries several vegan varieties. This here is “pepperoni pizza”. I do recommend them!

Stuffed bell peppers are a classic favorite! Easily veganized by using Boca Crumbles instead of beef.

Mac & Cheese with hot dogs in it. Just like I ate as a kid but now plant based πŸ™‚ And pickles wrapped with imitation deli slices covered in better than cream cheese! Fabulous! And my twice baked potatoes (I used the recipe from peta) – I make a bunch and store them in the fridge and reheat when hungry! Yay!

Simple. Buy in the freezer section. Bake in the oven πŸ™‚

This is my attempt at vegan chicken fettuccine. It turned out amaze-balls. It started by me finding this tub of Heido Ho smoky chia cheeze at Fresh and Natural in the refrigerated section. I bought it and figured I would cover noodles with it! Pretty good idea if I do say so myself. I of course added imitation chicken and some steamed veggies cause that’s how I roll πŸ™‚ DELICIOUS!

I added broth to the cheeze to make it more creamy..

This is a pasta I threw together in a crock pot – Noodles, tomatoes, veggies and Boca. I love crock pot meals because I can let it slow cook and it’s ready to go by dinner time and there are usually leftovers to eat for lunch.

Tofurky roast and gravy. Both worth the purchase. They keep in the freezer for a long time so they’re great to have on hand. And I made corn bake. Good food!

One of my favorite meals, lasagna. Full of spinach and veggies!!

Spaghetti squash and imitation chicken! Yum Yum

Eating vegan can be really simple. Like a sandwich. Which by the way was so good! I HIGHLY recommend Follow Your Heart better than mayo. All of their products are very good.

TACOS!!!!! Who doesn’t love tacos? Use black and refried beans and imitation sour cream!

My supreme grilled sandwich. Broccoli, carrot shreds, pickles, lettuce, bell pepper, tomaoes ……

And pumpkin pie. Mmmmmmmmm

Save Planet Earth

Recently I went to the Science Museum of Minnesota and watched A Beautiful Planet on their huge omni theater screen. It was an amazing film. Earth, without question, is beyond amazing. It’s the only planet we know of that supports such a variety of life. The only planet that grows trees. The perfect home for animals, plants, humans, insects.

So what’s the problem? Does the Earth need saving? What can the average person do? Won’t scientists and the government save planet Earth? Or is it up to us?

The world is talking right now about Donald Trump being elected as the next President for the United States. Donald Trump has said that global warming is a hoax. This is really dangerous for the planet. We need people in the government that care about the planet and will work hard to protect our water, trees, and wildlife.

Unfortunately we cannot always reply on the government to help us and to have the best interest for the people and the planet. Several politicians are siding with large oil companies. They’re in it for the money! Of course they don’t want to discuss the possibility that burning fossil fuel is contributing to destroying the planet. They aren’t interested in loosing money or changing their way of life.

Unfortunately the cattle companies are cutting down massive amounts of forests to create land for grazing and growing crops for cattle to eat. Trees clean our air and provide oxygen to breathe. If oil companies are going to pollute the air, at least leave the trees to help clean the air! Also, the run off from factory farms is destroying our water. The methane released from all the cattle we raise is also contributing to air quality problems.

This is real. This is happening now.

There are several ways to help lessen your carbon footprint though. First of all, decide that you care enough to change. And then get started!

  1. Consume less meat. No human needs to consume meat 3 times a day, every day of the week. We are out of control and it is killing the planet. Reduce how much meat you buy. Then we can lessen how many cows we raise. And of course the best option is not eating meat at all. This lessens animal suffering as well as pollution to the Earth.
  2. Reduce, Reuse, and Recycle. Seriously. Cans, bottles, cardboard, paper. Don’t throw it in the trash. Reuse what you can, donate, and recycle. Make smart purchases. Buy items in glass instead of plastic. Don’t buy produce wrapped in plastic. Don’t use plastic bags at check out.Reduce the amount of plastic you use. Plastic is a huge threat to our planet!! Plastic has completely polluted our water. Micro beads and broken down pieces of plastic never ever go away. They are eaten by sea life.
  3. Be an educated consumer. Don’t purchase beauty products with micro beads in them. Don’t purchase animal products. Don’t purchase more than you need. Buy local. Talk to the farmers at farmers markets. Get interested! Do your research.
  4. Walk instead of drive, when you are able to. Using less gas is important. Then we can stop drilling for more oil! Oil spills are a disaster to the planet! Plus, think of all the pollution that comes out of your car every time you drive. Ride share!
  5. Watch documentaries to learn more! Netflix and Youtube have some AWESOME shows to watch!
    1. Before The Flood
    2. Cowspiracy
    3. Plastic Island
    4. Forks Over Knives
  6. Follow vegan, vegetarian, and other environmentally friendly sites on social media. Instagram and Facebook have some great pages to follow:
    1. VeganStreet
    2. Greenpeace
    3. oneplanet
    4. gasanature (give a shit about nature)
    5. mercyforanimals
    6. peta
    7. March Against Monsanto
    8. Veganism Worldwide
    9. Wake Up World
    10. asapSCIENCE
  7. Have small families. The world is really over populated. Too many humans is an issue. We all have to share the water, air, and land. If someone decides to have more than a handful of kids, that’s selfish. Everyone loves family. But there are not enough resources. We can’t have more births than we have deaths. The population will just grow and grow. That is not sustainable.

It’s taken me a long time to get to where I am at. My biggest regret is not making changes faster. I am thankful for all the educational information on the internet and instagram. I have learned a lot about environmental issues, animal cruelty, plant based protein, my health, the planet, pollution, etc. Another great resource is where I found several groups with people who care and want to make a change for the better for our planet.

It is up to us. We have to fight for the planet. It’s too incredible to destroy.

Where’s The Meat, Rosie?

1. to change in form, appearance, or structure; metamorphose.
2. to change in condition, nature, or character; convert.

Life is constant change. One of my favorite quotes is, “Endless waves of transformation”.

I am always trying to learn more about personal health and health of the planet. For a few years I have been buying organic food as much as I can. I grow my own vegetables and herbs as much as I can too. I’m interested in reading about GMOs (genetic modification), artificial coloring, artificial flavoring, preservatives, hormones, etc. to continue to learn more and more about the foods we eat. I definitely think USA needs to have better requirements for labeling food. We deserve to know what is in our food. We deserve to be healthy.

Earth Day is rapidly approaching (Tuesday April 22 2014). I hope you are making plans to do something special! Plant a garden, clean up the yard or neighborhood, recycle, eat healthier and make healthier choices πŸ™‚

As for me, I am cutting meat out of my diet. I didn’t eat a bunch of meat before, but now I am consciously avoiding it. I started by cutting out red meat and only ate chicken. However I’d like to step it up another notch. I feel I need to make better decisions about dairy products as well.

Milk itself has a whole range of issues around it. I’m sad for the unfortunate cows that they inject with hormones to make them produce more milk than they would naturally. Cows, and other mammals, produce milk for their young. Babies need it to grow and get strong and then they stop drinking mothers milk. But adults continue to drink cows milk as they age, and they don’t need it. Many adults are lactose intolerant. Not to mention all the nasty things in milk…

I have been on a major veggie kick as of late. The first thing people ask me is, “What are you going to eat??” Like I’ll starve to death or be a burden on them. Luckily my mind is wide open to the possibilities.

One thing to note: As I make yet another transformation, I am still going through some of the condiments and items in my fridge that contain dairy. I plan to restock with healthier options as I go πŸ™‚

I made a DELICIOUS pot of vegetarian chili! I bought vegetarian beans (chili, kidney, pinto, black). I add some Spicy Hot V8, chopped a few potatoes, bell peppers, tomatoes, celery, onion, and add seasonings.

I’ve been making a lot of vegetable sandwiches and wraps. I buy a bag of Organic Spring Mix and some Spinach for my greens. I love the variety, color and taste. I’ve always mixed Spinach in with my salad/lettuce.

I hope I am healthier and wiser as I go. It feels good to do good πŸ™‚

Yum! Yum!

eat healthy

Enjoy Life

It’s been a very hot week! Temps have been over 90 degrees F for the past 7 days. I absolutely LOVE it! πŸ™‚

I’ve been spending a lot of time at the beach instead of crocheting, writing to pen pals, and doing crafts. My skin is still warm from being there today πŸ™‚

10 Things I Love Right Now

I think it’s important to be thankful and appreciate all the little things and always remember time goes fast and we need to soak it all in. I read about this idea, so as time goes on I try and ocassionally create lists of 10 Things I Love Right Now. (this is post #31-40)

But on a larger scale and different genre, I joined a swap for 100 Tips To Feel Better About Life.

31.) The Dollar Store. It’s amazing all the stuff for a dollar! I got a bunch of kids books (cardboard pages for the little ones).

32.) SPRING BREAK. The kids are in Arizona with their family and I get 4 days off work while they are gone. And once they return we’ll have 3 days of fun before we’re back to school.

33.) Reeces Easter Eggs!! Yes they are different from the cups, much MUCH better. YUMMY! And only around at Easter time. Such a shame. Now on sale everywhere.

34.) Wasting time online. Check this site out:

35.) The new candy or fruit dish my mom gave me on Easter. It’s glass with roses on it πŸ™‚

36.) The new playlist I created on my IPOD: Chill. (Alice by Avril Lavigne, My Love by The Bird and The Bee, Late Morning Lullaby by Brandi Carlile, Been It by The Cardigans, Don’t Panic by Coldplay, Love Song by The Cure, Syrup and Honey by Duffy, Across The Universe by Fiona Apple, Landslide by Fleetwood Mac, Amazing Life by Jem, Just Like Honey by The Jesus and Mary Chain, Ladder by Joan Osborne, Lile by Lisa Hannigan, Chasing Pirates by Norah Jones, Heavenly Day by Patty Griffin, Samson by Regina Spektor, Cartwheels by Reindeer Section, Pale Blue Eyes by Sheryl Crow)

37.) The Tell Take Heart Necklace contest:Β Actually be sure to check out all her contests and giveaways! They are all pretty cool including an Alice In Wonderland necklace.

38.) The Dark Angels group on Swap-Bot which I host, and I also love the Geek Swap Central group which I participate in. It’s nice swapping with people who are more like you.

39.) Baby farm animals at the Minnesota Zoo. I took the kids and we saw a calf that was just born 2 days prior. Plus lots of other newly born baby animals.

40.) Warmer, sunny weather which is finally coming to Minnesota

Happy Easter :)

I spent the day eating ham, turkey, potatoes, and corn. I hunted down my basket in the woods (survived a tick attack)Β and played some yard games outside with family. There was mini golf, bean bag toss- altered into a tennis ball toss, and ring toss. I won the “Guess the amount of jelly beans” contest and got to bring home the jar πŸ™‚ The answer was 525 and I guessed it on the nose. It was a great Easter. I hope everyone had a nice time with their family.

To Craft Or Not To Craft

These days I spend most of my time looking for house rentals. Unfortunately there’s not a lot to choose from. April is practically here and I thought I would be moved in April 1st! I haven’t even found a place yet! Yikes. I’ve been neglecting my crafts for too long. I’m caught up in career searching, soul exploring, rental ads, and dealing with life.

But I did take some time the other day to make this necklace. I don’t usually work with chains, although I LUV how they look! It took me around 3 hours (with some laundry loads and letting the dogs outside ocassionally). My hands were sore from taking apart the long chains I bought. I love the charms, I bought a set of keys and lock from Michaels. I’m not sure if I like it better worn tight on the neck like a choker or longer for a more bohemian look. I’m excited to be making some jewelry again and look forward to doing another necklace.

The string of purple beads are on a memory wire. The purple beads that dangle are on a pin. I used 4Β heart charms attached with jump rings.

Since I work with kids a lot I made a nice large Dora The Explorer pillow to keep at my house.Β  This week I had 2 overnights with 3 kids. I showed the oldest how to make a pair of earrings and matching necklace, which she loved and has been wearing all week πŸ™‚

I used a simple technique for the necklace she made- I call it braiding because you use 3 strings of memory wire. Connect them on one end. Think of the strands as A, B, and C. Then start to bead. One bead will go on strands A & B and then the next bead goes on strands B & C and then the next goes on A & B and so forth. It’s a great easy necklace that looks cool.

The weather has been great! I enjoy a little bit of winter, but I am always happy to see Spring and Summer!
