Crock Pot Lasagna

This was my first time making lasagna in a crock pot. It was incredibly delicious! The Follow Your Heart cheese was perfect! The noodles were perfect. Everything was perfect.


I used Beyond Beef (imitation ground beef). Diced onions and bell peppers. Diced mushrooms and tomatoes. Cut spinach (I used a frozen bag). Noodles (I used oven ready/No boil). Pasta Sauce. And Vegan cheese.


I layered the crock pot with all the ingredients, layer after layer. I had to snap the noodles to get them the correct length to fit inside the crock pot. Then I let it cook for a few hours.


Wow. Amazing.

Sloppy (Boca) Joes

When my friend makes vegan sloppy Joes, she calls them sloppy Janes. She adds a dash of paprika to hers. They’re delicious!

Here is a version of vegan sloppy joes that I made for dinner. I add bell peppers, tomatoes,  and onions to the mix. Tastes great on bread or bun! Add some veggies for a side, and ta-da!

I buy boca crumbles at a local grocery store, Family Fresh. I’ve seen a variety of imitation ground beef at several stores, just look around in the freezer section 🙂



I love using the crock pot. I can let the imitation ground beef, onions, tomatoes, and peppers cook for hours in there 🙂 Then I can have a few sandwiches throughout the day! It’s a great way to sneak in extra veggies and they thicken up the sloppy joe!

You can always add a slice or shreds of vegan cheese. It’s easy to make a big batch for parties or serving several people! It’s easy to make and always tastes great.

Where’s The Meat, Rosie?

Life is constant change. One of my favorite quotes is, “Endless waves of transformation”.

I am always trying to learn more about personal health and health of the planet. For a few years I have been buying organic food as much as I can. I grow my own vegetables and herbs as much as I can too. I’m interested in reading about GMOs (genetic modification), artificial coloring, artificial flavoring, preservatives, hormones, etc. to continue to learn more and more about the foods we eat. I definitely think USA needs to have better requirements for labeling food. We deserve to know what is in our food. We deserve to be healthy.

Earth Day is rapidly approaching (Tuesday April 22 2014). I hope you are making plans to do something special! Plant a garden, clean up the yard or neighborhood, recycle, eat healthier and make healthier choices 🙂

As for me, I am cutting meat out of my diet. I didn’t eat a bunch of meat before, but now I am consciously avoiding it. I started by cutting out red meat and only ate chicken. However I’d like to step it up another notch. I feel I need to make better decisions about dairy products as well.

Milk itself has a whole range of issues around it. I’m sad for the unfortunate cows that they inject with hormones to make them produce more milk than they would naturally. Cows, and other mammals, produce milk for their young. Babies need it to grow and get strong and then they stop drinking mothers milk. But adults continue to drink cows milk as they age, and they don’t need it. Many adults are lactose intolerant. Not to mention all the nasty things in milk…


I have been on a major veggie kick as of late. The first thing people ask me is, “What are you going to eat??” Like I’ll starve to death or be a burden on them. Luckily my mind is wide open to the possibilities.

One thing to note: As I make yet another transformation, I am still going through some of the condiments and items in my fridge that contain dairy. I plan to restock with healthier options as I go 🙂

I made a DELICIOUS pot of vegetarian chili! I bought vegetarian beans (chili, kidney, pinto, black). I add some Spicy Hot V8, chopped a few potatoes, bell peppers, tomatoes, celery, onion, and add seasonings.

I’ve been making a lot of vegetable sandwiches and wraps. I buy a bag of Organic Spring Mix and some Spinach for my greens. I love the variety, color and taste. I’ve always mixed Spinach in with my salad/lettuce.

I hope I am healthier and wiser as I go. It feels good to do good 🙂
