What The F**k Do Vegans Eat?

Some people think vegans have a limited diet. But in reality, you can veganize just about anything you want to eat. It takes time to make things at home, but it’s so worth it! Then you can use fresh and organic ingredients. Plus, there are some great frozen vegan options that I recommend buying.

To me, the worst thing to hear is “Ewwww!” and “Gross!” from an omnivore when we discuss vegan food. That’s offensive! I care about my body and my health and I prepare damn good food. To insult someone’s cooking/food before even trying it shows how closed off they are to new ideas, to new tastes, to anything! It’s just FOOD! Like real food.

One thing I have discovered over the past few years is that tons of people are on a plant based path, some further along than others, and for several different reasons.

Most people switch to plant based for their health. That’s why I did it in the beginning. I wanted to be slimmer and have clear skin and better digestion. I’ve met some vegans through meetup.com and they also cut animal products in order to get healthier.Their success stories are wonderful to hear. We know that animal products clog us up. It is better to avoid them for good health, plus they are full of antibiotics and hormones.

Others are cutting back on meat and dairy to help the environment. My dad watched some documentaries on how factory farms produce more toxic emissions than all modes of travel combined. So now he wants to purchase less. I think that’s a great start! I also want to continue a plant based diet for the planet!

And also there is the factor of animals rights and lives. They obviously don’t want to die. They obviously have feelings and emotions. Many animals are very intelligent and social. And all animals deserve respect.

Anyhow! Here are some AWESOME meals that I have made recently. I haven’t blogged in a couple weeks but I have been taking photos! πŸ™‚

Oh, mama! Let’s start with this burger and kabobs! HELLO! I make my own salsa — yum! And I added mustard cause I love mustard!

VeganEgg is a good product to keep on hand. I scrambled up some and cooked the veggies too. Served with Follow Your Heart better than mayo and of course mustard!

When I am lazy, I cook frozen “hot pockets”. The Fresh and Natural store carries several vegan varieties. This here is “pepperoni pizza”. I do recommend them!

Stuffed bell peppers are a classic favorite! Easily veganized by using Boca Crumbles instead of beef.

Mac & Cheese with hot dogs in it. Just like I ate as a kid but now plant based πŸ™‚ And pickles wrapped with imitation deli slices covered in better than cream cheese! Fabulous! And my twice baked potatoes (I used the recipe from peta) – I make a bunch and store them in the fridge and reheat when hungry! Yay!

Simple. Buy in the freezer section. Bake in the oven πŸ™‚

This is my attempt at vegan chicken fettuccine. It turned out amaze-balls. It started by me finding this tub of Heido Ho smoky chia cheeze at Fresh and Natural in the refrigerated section. I bought it and figured I would cover noodles with it! Pretty good idea if I do say so myself. I of course added imitation chicken and some steamed veggies cause that’s how I roll πŸ™‚ DELICIOUS!

This is a pasta I threw together in a crock pot – Noodles, tomatoes, veggies and Boca. I love crock pot meals because I can let it slow cook and it’s ready to go by dinner time and there are usually leftovers to eat for lunch.

Tofurky roast and gravy. Both worth the purchase. They keep in the freezer for a long time so they’re great to have on hand. And I made corn bake. Good food!

Eating vegan can be really simple. Like a sandwich. Which by the way was so good! I HIGHLY recommend Follow Your Heart better than mayo. All of their products are very good.

A Vegan Thanksgiving

A meat and dairy free Thanksgiving! It was SO good! So filling! All homemade and incredibly delicious.There is never a need to worry that you wont have anything to eat if you go vegan. Seriously.

1.) Green Bean Casserole – I make “cream of mushroom” using soy milk, vegetable broth, flour, diced mushrooms, and a diced shallot. Heat over the stove in a large skillet until desired thickness (use more or less flour). I steam the green beans, toss in a casserole dish with the vegan homemade cream of mushroom and add Fried Onions. Bake for about 30 minutes in the oven. YUM!

2.) Corn Mix – I heat up canned corn, diced onions, diced bell peppers, and diced tomatoes on the stove. Sometimes I add bread crumbs. You can bake it in the oven or just heat it up on the stove.

3.) Tofurky – There are several imitation meats out there. I think they are all really good. For this Thanksgiving meal I cooked a Tofurky Roast. It comes in a box in the freezer section of the grocery store. It can be cooked frozen or thawed. There is a yummy rice stuffing inside!

4.) Carrots, Onions, Stuffing, and Bread Rolls – What is a meal without some additional sides? Any steamed veggie would have been perfect. We chose carrots.

5.) Pickle Wraps – I used two different types of vegan deli meat to wrap around pickles. I have a layer of vegan cream cheese between the meat and pickle. These are so good! I enjoyed the imitation turkey and also the imitation ham. Both worked great!

6.) Baked Potatoes Deviled Egg Style – I cut potatoes in half. Baked them in the oven for half an hour. Then scooped out the middle of each potato. I mixed that up with some vegan mayo, vegan sour cream, mustard, dill, salt and pepper. Then filled the potatoes back up. Delicious cold or warm! I prefer eating them heated up. I put leftovers in the fridge and re baked them the next day! Perfect!

7.) Mashed Potatoes – So easy! So delicious! Simply boil the potatoes till tender. Mash them with some vegan milk and vegan butter. Done!

8.) Vegan Gravy – We used Tofurky. It comes in a tub and I find it in the freezer section of the grocery store.

I think eating Vegan is easier than people think. It feels healthier. I take my time to prepare delicious homemade meals. I care about what I put into my body. I have noticed a big change over the past few years. My digestion is better. My skin is clearer. I feel better by not consuming animal products πŸ™‚

Crock Pot Lasagna

This was my first time making lasagna in a crock pot. It was incredibly delicious! The Follow Your Heart cheese was perfect! The noodles were perfect. Everything was perfect.

I used Beyond Beef (imitation ground beef). Diced onions and bell peppers. Diced mushrooms and tomatoes. Cut spinach (I used a frozen bag). Noodles (I used oven ready/No boil). Pasta Sauce. And Vegan cheese.

I layered the crock pot with all the ingredients, layer after layer. I had to snap the noodles to get them the correct length to fit inside the crock pot. Then I let it cook for a few hours.

A Girls Gatta Eat

I love food. If you follow me on instagram you probably already know that! I love to cook and eat good food. And all of it is vegan πŸ™‚

I want to share some of the meals I’ve made because often times people don’t really know what vegans actually eat. It’s not difficult. It’s healthier. And the meals really are so good! Plus I take pride in a meal I made at home.

  1. Shepherd’s Pie — crock pot style

I love to use a crock pot because it’s easy, the house smells amazing, and there are leftovers for lunch the next day! For this meal I used imitation beef crumbles (there are several brands to chose from that come in a bag in the freezer isle). I also added, corn, carrots, peas, and tofurky gravy. I made mashed potatoes (peel and boil potatoes, mash them with some soymilk) and put them on top and then let it cook for about 6 hours. Super delicious!

2. Breakfast Burrito

I used chorizo style imitation meat, tortillas, Vegan Eggs, hashbrowns, peppers and onions and also maple syrup.

I cook the chorizo with diced onions and bell peppers. Cook the vegan eggs. Cook the hash browns. Then make a burrito! I like to drizzle Maple Syrup over mine. It’s really good!

3. Crock Pot Chili

I love chili. I eat it a lot. It is so easy to make and can be done several ways. I like to add v8 vegetable juice (spicy hot), potatoes, black beans, kidney beans, pinto beans, celery, onion, tomatoes, corn, bell peppers and chili powder.

4. Mostaccioli (Pasta)

I used pasta sauce, noodles, veggies, and vegan Follow Your Heart Parmesan Cheese. I absolutely love the Follow Your Heart line of foods. They make awesome salad dressings, imitation sour cream, mayo, cheeses, etc. All taste great by the way! So try that brand. I prefer Follow Your Heart over Daiya. You have to try yourself and see what you like though.

5. “Meat” and Veggies — So many easy variaions

Tofurky and Gardein have some great imitation meats available in the freezer sections. I like the roasts, fillets, strips, crumbles, etc. Add any veggies you like and you have a meal. Buy tofurky gravy or make your own vegan gravy.

Vegan gravy: Heat a milk alternative in a large skillet (soymilk/almond milk), add vegetable broth, gradually add flour, dice up a shallot, you can add garlic, I love to add diced mushrooms — add more/less flour to make it thicker or thinner.

Animal products clog up your arteries, your digestive tract, and they can be bad for your skin. Go plant based. Try meat free options. Enjoy what you eat and take pride in making it.

Save Planet Earth

Recently I went to the Science Museum of Minnesota and watched A Beautiful Planet on their huge omni theater screen. It was an amazing film. Earth, without question, is beyond amazing. It’s the only planet we know of that supports such a variety of life. The only planet that grows trees. The perfect home for animals, plants, humans, insects.

So what’s the problem? Does the Earth need saving? What can the average person do? Won’t scientists and the government save planet Earth? Or is it up to us?

The world is talking right now about Donald Trump being elected as the next President for the United States. Donald Trump has said that global warming is a hoax. This is really dangerous for the planet. We need people in the government that care about the planet and will work hard to protect our water, trees, and wildlife.

Unfortunately we cannot always reply on the government to help us and to have the best interest for the people and the planet. Several politicians are siding with large oil companies. They’re in it for the money! Of course they don’t want to discuss the possibility that burning fossil fuel is contributing to destroying the planet. They aren’t interested in loosing money or changing their way of life.

Unfortunately the cattle companies are cutting down massive amounts of forests to create land for grazing and growing crops for cattle to eat. Trees clean our air and provide oxygen to breathe. If oil companies are going to pollute the air, at least leave the trees to help clean the air! Also, the run off from factory farms is destroying our water. The methane released from all the cattle we raise is also contributing to air quality problems.

This is real. This is happening now.

There are several ways to help lessen your carbon footprint though. First of all, decide that you care enough to change. And then get started!

  1. Consume less meat. No human needs to consume meat 3 times a day, every day of the week. We are out of control and it is killing the planet. Reduce how much meat you buy. Then we can lessen how many cows we raise. And of course the best option is not eating meat at all. This lessens animal suffering as well as pollution to the Earth.
  2. Reduce, Reuse, and Recycle. Seriously. Cans, bottles, cardboard, paper. Don’t throw it in the trash. Reuse what you can, donate, and recycle. Make smart purchases. Buy items in glass instead of plastic. Don’t buy produce wrapped in plastic. Don’t use plastic bags at check out.Reduce the amount of plastic you use. Plastic is a huge threat to our planet!! Plastic has completely polluted our water. Micro beads and broken down pieces of plastic never ever go away. They are eaten by sea life.
  3. Be an educated consumer. Don’t purchase beauty products with micro beads in them. Don’t purchase animal products. Don’t purchase more than you need. Buy local. Talk to the farmers at farmers markets. Get interested! Do your research.
  4. Walk instead of drive, when you are able to. Using less gas is important. Then we can stop drilling for more oil! Oil spills are a disaster to the planet! Plus, think of all the pollution that comes out of your car every time you drive. Ride share!
  5. Watch documentaries to learn more! Netflix and Youtube have some AWESOME shows to watch!

  7. Have small families. The world is really over populated. Too many humans is an issue. We all have to share the water, air, and land. If someone decides to have more than a handful of kids, that’s selfish. Everyone loves family. But there are not enough resources. We can’t have more births than we have deaths. The population will just grow and grow. That is not sustainable.

It’s taken me a long time to get to where I am at. My biggest regret is not making changes faster. I am thankful for all the educational information on the internet and instagram. I have learned a lot about environmental issues, animal cruelty, plant based protein, my health, the planet, pollution, etc. Another great resource is meetup.com where I found several groups with people who care and want to make a change for the better for our planet.

It is up to us. We have to fight for the planet. It’s too incredible to destroy.

Gardein Burger

Eating vegan can be easy! And you can still have a burger! πŸ™‚ These are great because they’re fast to make for a simple lunch or snack. I add onions, pickles and sometimes tomato, ketchup and mustard or bbq sauce…they’re pretty good!

Go vegan! Every animal wants to live. Factory farming is harming the environment. Fats from meat clogs arteries. There are tons of imitation meats available to purchase.

Female cows are repeatedly impregnated and then when their calf is born, the calf is taken away and humans consume the mother cows milk. She produces the milk for her baby but humans take it. And they take the baby too. Mother cows cry out for their babies. This is why I don’t eat beef. Also, cows are incredibly smart. Plus, they alter the cow to maximize milk production and it really wears the cows out!

Plus, plant protein is healthier and cruelty free. It’s also the answer to helping fight global warming.

Vegetarian Corn Dogs

Sometimes a meal takes a lot of effort and some planning ahead. Sometimes it comes right out of the freezer. LOL.

I love a variety of super easy frozen meals. These corn dogs are one of them. I usually make myself 2 doggies. The texture is perfect.

Such a simple way to eat vegetarian. Tastes great too! So even if you can’t cook, they have ready made vegan and vegetarian options out there!
