Dinner is served

This is for sure one of my favorite meals! Maybe because I love variety. I tend to mix all my sides together and make a heaping pile of deliciousness 🙂

Mashed potatoes are super easy to make. Do people even use box potatoes? I don’t know why they would. I peel and wash the potatoes, cut them in half or into big chunks, and then boil them in water. Once they are soft, I mash them with some almond milk or other milk alternative. Sometimes I add a vegan butter or top them with vegan sour cream. For this meal however, I used the vegan gravy.

The Turk’y (imitation turkey that tastes wayyyyyy better than a real dead bird! Ew!) is super easy to make in the oven. One frozen package comes with 2 and they only take 30 minutes in the oven. They’re filled with stuffing and taste really good! They also come with packets of gravy to thaw in a bowl of warm water. All vegan! Yay!

I made corn bake in a casserole dish. I use canned cream corn, regular sweet corn, and chopped bell peppers, onion, and this time I added a can of diced tomatoes! OMG super good idea. I also add organic bread crumbs or you can use stuffing. Then I bake it in the oven about 30 minutes, or till heated.

Green bean casserole is my favorite! Although cream of mushroom soup is not vegan, so this side is vegetarian. I use fresh green beans (canned will work but not as tasty!). I trim the ends of the beans and then steam them for a short while. Then I mix the beans with cream of mushroom and french’s onions. Bake about 30 minutes and enjoy!

Then I also have some bread rolls as yet another side 🙂

Cooking at home lets me buy the freshest and organic ingredients. And allows me to chose Vegan or Vegetarian options.

Eating at home is a great way to spend time with those you love 🙂 And feel good about what you’re eating!

Stuffed Bell Peppers

I absolutely LOVE stuffed bell peppers! YUM! 🙂

I used green bell peppers. But red, yellow, and orange are awesome to use too! Usually the green peppers are a bit cheaper in the grocery store. In the summer I grow my own bell peppers and use those! Bell peppers are very easy to grow in pots. I’ve had success with them growing in pots on the deck.

You can slice the pepper however you like. Then stuff them with cooked rice, mixed veggies, diced tomatoes, and if you like, imitation meat. I used boca crumbles and onions for my stuffed bell peppers. Corn is another great addition!

Trader Joes sells a frozen bag of Veggie Fried Rice. I use that sometimes to stuff the peppers. Otherwise I will make rice and add veggies and create my own mixture for the filling.

This dish is great for summer or winter. Veggies are wonderful year round! 🙂

You can add some vegan shredded cheese if you like!

Eat less meat or go meat free all together. Consuming meat is destroying the environment. If we want to save the rain forests, we need to realize the impact of consuming meat and animal products. Meat free Mondays is a great start! Discover all the awesome meals you can prepare without contributing to factory farming. Try a simple, delicious. and tasty meal like Stuffed Bell Peppers!

Eating meat contributes to poor health, cancer, obesity, and damages planet Earth because we consume way too much. Cutting back is helpful if you cannot quit eating meat completely. Be open minded and try some vegan or vegetarian recipes. Many recipes can easily be altered 🙂

Eating meat free feels good! In fact, it feels GREAT! Vegetables are your best friend and they will keep you looking and feeling healthy. Don’t worry, there is plenty of protein in plants and in imitation meat! Plus beans and nuts too.

Sloppy (Boca) Joes

When my friend makes vegan sloppy Joes, she calls them sloppy Janes. She adds a dash of paprika to hers. They’re delicious!

Here is a version of vegan sloppy joes that I made for dinner. I add bell peppers, tomatoes,  and onions to the mix. Tastes great on bread or bun! Add some veggies for a side, and ta-da!

I buy boca crumbles at a local grocery store, Family Fresh. I’ve seen a variety of imitation ground beef at several stores, just look around in the freezer section 🙂

I love using the crock pot. I can let the imitation ground beef, onions, tomatoes, and peppers cook for hours in there 🙂 Then I can have a few sandwiches throughout the day! It’s a great way to sneak in extra veggies and they thicken up the sloppy joe!

You can always add a slice or shreds of vegan cheese. It’s easy to make a big batch for parties or serving several people! It’s easy to make and always tastes great.

Stuffed Turk’y

I went to breakfast with my sister one morning and I mentioned to her that I went to the new Herbivorous Butcher shop in Minneapolis. I was very excited about the shop opening in early 2016! I told my sister that I bought two racks of ribs. I said, “They were really good!”

Her reply was, “Were they really good, or were they good for vegan?”

I said they were good. If they were okay, I would have said they were okay. Good means good. Not just, “good for vegan food”. To be honest, they were delicious!

So I started thinking about how rude that was. I am always hurt when people think vegetarians and vegans don’t eat “good” meals. Or don’t eat anything tasty. How ridiculous. I really enjoy cooking and baking.

Yes, I used to eat meat. It always grossed me out. But growing up in a family of meat eaters, I didn’t have any vegan role models. As an adult, I was able to expand my circle of friends and learn so much more on the internet than what was presented to me in my daily life.

Anyhow, I want to share some of my meals because I DO eat yummy food! Maybe someone out there wants to know about cooking vegetarian or vegan meals too!

Grocery stores (even Target) carry a lot of meat free options. Vegans and vegetarians don’t have to only eat raw veggies.

I made this stuffed turk’y in my oven. It takes about a half hour to cook. You easily warm up the vegan gravy in a bowl of warm water. I made corn bake (corn, onions, bell peppers, and bread crumbs) and also homemade mashed potatoes to go with it. YUM!

I would definitely recommend trying the stuffed turk’y and adding any sides you like 🙂

No animals were killed for my meal. It’s packed with protein. It’s filling and delicious.

Dinner

I haven’t been crafting that much lately, but I have been cooking new recipes. So I thought I’d post about that today:

 

This is a chili pot pie with hamburger, beans, onion, bell pepper, little chili powder, pizza sauce, cheddar cheese soup, shredded cheese and of course biscuits. It was delicious 🙂
